My family eats like cows. There is no way around saying that. My kids generally eat more than me, sometimes my husband. THEY NEVER STOP EATING! They're 2, 4, and 6, by the way. They look like normal healthy kids, including the 6 year old sporting some nice muscle definition from all of his playing. Lucky them, considering they eat like sumo wrestlers.
My biggest challenge with clean eating and organic eating is cost. Now with this new strict diet, finding meals we can eat is hard. It's getting better, but still difficult. I like eating the same meals, if we like them, but I don't want to HAVE to eat the same meals several times a week. I like options. What can I say, I'm a rebel!
I thought I would start trying to put up my weekly meal plans to give you some ideas of what and how we eat. I'm trying out "theme days" right now. You know the old "Taco Tuesday" kind of thing. This is the first week of that, so we will see how it goes.
I'll insert here that our breakfast EVERY day is farm fresh eggs. Most days they're just fried up in a pan with some grassfed butter, organic salsa, and cheese. Some days we make mini egg frittatas in cupcake tins and throw in some veggies. I did make this butternut squash frittata for dinner last night and it was so amazing, we will be adding it to the weekly breakfast menu.
For lunch we often do organic grassfed beef hotdogs (not the best option but I'm pregnant and dang it, I get tired of cooking 3+ times a day!), tuna salad, chicken salad, or left overs. Sometimes I surprise the kids with a concoction of laziness called "snack lunch", that I invented. It's basically a bunch of snacks thrown on a plate when I have nothing to cook... or no desire to cook. It's often things like some cottage cheese, cucumbers, carrots, a few berries or half an apple. They love it, and I get out of cooking.
Week of 10/13
Sunday- Crockpot Day
Crockpot fajitas. I must say I'm pretty excited about this. I hope it turns out well. I will be using 1 whole roast chicken, 6 bell peppers, 2 large onions, and a spaghetti squash (as a filler), with lettuce wraps instead of tortillas.
Monday- Asian
Asian style "noodles" aka spaghetti squash. I haven't tried this one yet, but I don't see how it would be anything other than delicious. I will probably add some chicken into the dish, as well. I will be leaving out the nut butter, since nuts are out of our diet right now.
Tuesday- Mexican
Taco "rice" bake. It's basically "riced" cauliflower used like you would rice. I've made fried rice with this technique and it was a hit. Hopefully this will be too.
Wednesday- Soup or Stew
"Potato" soup. I'm not gonna lie, I'm kind of worried about this one. I LOVE potato soup and made a KILLER one the other day. However we cannot have potatoes very often, due to the high phytic acid content. I've never eaten radishes, so this will definitely be an adventure! Wish us luck!
Thursday- Italian
Chicken and broccoli "alfredo". This just looks all around amazing. We will use spaghetti squash in place of the noodles. I really need to get a vegetable spiraler to make "zoodles" from zucchini.
Friday- All-American
Chicken and green beans. This was a recipe born out of necessity and immediately became a favorite and we would eat it every day if we could. I just roast up a chicken in the oven or crock pot seasoned with garlic, onion, and paprika (you could do whatever to it). I steam up about 3lbs of grean beans and then toss it with lots of grass fed butter, garlic powder, and salt. Once it forms a nice sauce, I add in the cooked and shredded chicken (I've even done ground turkey) and serve in heaping platefuls. There is NEVER enough of this, but I cant fit anymore green beans in my steamer at one time, and I'm not gonna make 2 batches. The kids are OBSESSED with this. If you want your kids to eat green beans, try this. It is making me drool just thinking about it.
Saturday- beans or rice or potatoes
Slow cooker cream cheese chicken chili. This week I choose BEANS! This day is the most exciting to me. Since our diet is grain free and as low as possible in phytic acid, we cannot have these things on a regular basis. Once a week is probably pushing it, to be honest. I will soak the rice if we use rice, sprout the beans if I use beans, or use potatoes as sparingly as possible.

Crockpot fajitas sound amazing and super easy and I love fajitas.

Would you do a post on soaking rice and sprouting your beans?
we just ate them. UH-MAZING! I did learn though to only add your peppers about an hour before you want to eat. They basically all disintegrated :( I did add some later when I noticed how soft they were. We served it over spaghetti squash instead of in lettuce wraps b/c it almost ended up like a soup.
