Thai Chicken Soup

I'm always up for new recipes and new flavors, especially when you're on a restricted diet. Lately, I've been wanting chicken noodle soup. Well, being that we cant have pasta, that makes things difficult. I then had an epiphany! Use spaghetti squash as my "noodles"! I use it in place of pasta all the time, so why not in soup? That was it. A whole new world of recipe possibilities was opened up! Here was our first concoction!

Thai Chicken Soup (adapted from this recipe)

Ingredients:
For the broth:

-4 cups homemade chicken stock
-1-2 Jalapenos, seeded and chopped
-about 1/4c Liquid Aminos
-1Tbsp dried cilantro
-1Tbsp dried Thyme


To finish:
-Shredded cooked chicken (about 2-3 cups or 1/2 roast chicken)
-2 cooked Spaghetti squashes strung out
-Sriracha sauce (for garnish, optional)
-Scallions (sliced) (for garnish, optional)

-fresh cilantro (for garnish, optional)
-lime wedges (for garnish, optional)

Directions:



-Roast chicken and/or chop up cooked chicken (I use this timing/heat as a guide to roast my chicken)




-Preheat oven to 425 degrees
-Cut spaghetti squash in half and place face down on baking sheet and bake for about 20 min until inside strings out easily (20 min is for larger squash)








-Put all ingredients for broth into a pot and bring to a simmer and allow to simmer as long as needed until squash is done
-Adjust salt, pepper, liquid aminos, thyme, and cilantro to taste.

This was my broth when it was done, before I added it to the other ingredients.


-Put desired amount of spaghetti squash and chicken in a bowl (I did about 1c squash and 1/3c chicken per bowl to start with)
-Pour broth over squash and chicken. (You do not need to cover the squash and chicken completely with broth, unless you want to. We just put a little broth on the spoon with each bite, from the bottom of the bowl.)




   
SERVE AND ENJOY! 

This fed our family of 5. (We all had 2+ bowls for dinner, so it could serve even more)


Everyone LOVED it and there were no leftovers since we all just kept eating! Our dessert that night, ended up being more soup! It was delicious and I cannot WAIT to make it again :)

  1. That sounds really good! I think I have only had spaghetti squash once before, I think I might need to try it again.

    Also, what are the liquid aminos for and what do they taste like?

    1. Liquid Aminos are Certified NON-GMO liquid protein concentrate, derived from healthy soybeans. Until recently, I actually I thought this was soy free (I just grabbed this off the shelf at the store), b/c we don't like soy. I'm going to get some real coconut aminos OR organic Tamari which is fermented soy sauce. I'd be okay with us eating that, since we eat it so rarely.

      Anyways, it tastes like a less salty soy sauce :)

    2. So it is just like a protein supplement? I assume it must be healthier than using soy sauce too?

    3. Okay, scratch that, I googled. I think I am going to look for some for us, the kids like to use soy sauce, and this seems like a much better alternative.
